This turkey-apple salad is an easy salad recipe--simple yet sophisticated...the kind you'd probably see on the menu at an upscale bistro. The addition of Granny Smith apples, (although any type of apple works fine) lends a tart-sweet taste. Celery, of course, brings a great crunch to the mix.
If using plain mayo as the binder, try adding spices like fresh rosemary, oregano, or even cracked pepper to give added depth to the flavors.
This recipe rates highly among the turkey salad recipes as well as the apple salad recipes because it's simple, refreshing and delicious.
Although the recipe calls for this to be on top of mixed greens, it's equally good as filling in a pita wrap for a lunch on the go. If you're watching your fat content, you might choose light or fat-free mayo. I personally would choose the light because its taste is closer to the "real thing."
Ingredients
3 unpared apples, cored and cubed
1 small Bermuda onion, sliced into rings
4 stalks celery, sliced
2 cups cold turkey, diced
salt to taste
mayonnaise
Method
Slice up your onion, celery, and turkey.
Cube the apples just before adding to the other sliced-up ingredients, so they will maintain their nice, white interior.
Add salt and mayonnaise to moisten, and chill.
Serve on crisp greens of your choice.

For a little different taste treat, you might try adding dried cranberries and/or sliced almonds, chopped walnuts or even finely-chopped cashew nuts.
