Our Refreshing Apple Salad goes well with just about everything. It doubles and triples easily, so picnics and potlucks are perfect occasions to count on its versatility.
I have served this creamy apple salad with pork, ham, chicken, beef and even as a little side dish with lasagna. It "steps up to the plate" every time.
Many times, my sister and others have chosen to enjoy a dish of our fruit salad for dessert as well. The fruits themselves bring natural sweetness to the dish, and the miniature marshmallows and coconut do their parts to sweeten up the tartness of the sour cream.

Ingredients
2 red apples, not peeled, cut up into bite-size pieces
1 tablespoon lemon juice
1 cup pineapple chunks, drained
1 cup of sweetened coconut
1 cup chopped nuts
1 cup sour cream
Optional: You might try adding other fruits like mandarin oranges or strawberries.
Method
Core the apples and cut them into bite-size pieces.
Sprinkle the lemon juice on the apples to maintain their nice white color.
Drain and add the pineapple chunks.
Add coconut, chopped nuts, sour cream, and mix well.
