Recipe for Waldorf Salad
With Spinach and Grapes


The wonderful freshness of our new Recipe for Waldorf Salad.



Here's a Recipe for Waldorf Salad, made distinctively different with the addition of spinach and grapes. I think spinach is the new lettuce because it seems to just fit nicely with so many otherwise-common ingredients and bring them to new heights.

Ours is also a fresh fruit salad recipe with a quick, homemade salad dressing. It's a creamy fruit salad dressing with just a touch of cinnamon, which goes exceedingly well with the ingredients in this salad...particularly apples, of course. I used light mayonnaise, although regular could be used, making it a healthy apple recipe as well.

We use the traditional Waldorf Salad Ingredients with the addition of nice, seedless, red grapes. The slightly different and healthy salad dressing blends so well and the baby spinach leaves brings with them a whole new and wonderful taste. You will love serving this "new and different" salad to family and guests. Ingredients

1/2 cup light mayonnaise (Regular mayo may be used.)

2 tablespoons frozen apple juice concentrate, thawed. *See tip below.

1/4 teaspoon ground cinnamon

2 large red eating apples, cubed (About 4 cups) I used Red Delicious Apples.

1/2 cup seedless red grapes, halved

1/2 cup (about 1 medium stalk) chopped celery

1/2 cup chopped walnuts

4 cups fresh baby spinach leaves

*TIP: Please don't waste your frozen concentrate. When you open the container, just scoop out the desired amount to thaw. Place the rest in a small freezer bag and return it to the freezer. That way, you'll have it on hand for your next recipe.



Method

  • In a large bowl, mix together well the mayonnaise, juice concentrate and cinnamon.

  • Add the apples, grapes, celery and walnuts, and toss with dressing to coat.

  • Before serving, place cleaned and dried spinach leaves into a large bowl.

  • Spoon the apple mixture on top of spinach leaves and toss to mix and coat all ingredients.
