Our Recipe for Applesauce Cake boasts a buttery, crumble topping which blends nicely with its spiced fresh apple and applesauce filling. It's easy to make but has a beautiful taste and texture.
This applesauce cake recipe makes a 9-inch cake, so it's ideal for smaller families or would serve 6 generous servings to guests...well maybe 5 if you wanted to be included in the dessert course. I kind of assume you would, right?
If you choose, you could garnish each serving with a mint leaf or two, and top each with either a dollop of whipped cream or a scoop of ice cream. Minus the mint leaves? No problem, just sprinkle a bit of cinnamon on the top. Of the many applesauce recipes, this one can stand on its own very nicely.
Ingredients
3 cups all-purpose flour
3/4 cup granulated sugar
1/2 teaspoon salt
3 egg yolks
1 cup butter
1 teaspoon lemon peel
1-3/4 cups applesauce
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1 apple, peeled, cored and thinly-sliced
Method
1. Preheat oven to 350°F and spray or grease a 9x9x2 pan.
2. Whisk together the flour, sugar and salt and set aside.
3. In another bowl, beat together the egg yolks, butter and lemon peel.
4. Using your mixer, add the flour mixture to the yolk mixture. It will not be smooth...it'll be crumbly.
5. Divide into 2 parts. There's a goodly amount of crumb mixture, so make sure you press a nice, thick layer on the bottom of the pan, and put aside the rest for the topping.
6. Mix together the applesauce, cinnamon and cloves.
7. Put the sliced apples in a layer right on top of the mixture on the bottom of the pan, spread the applesauce mixture on top of the apples and sprinkle the remaining crumb mixture on top.
8. Bake in the preheated oven for 40 to 45 minutes, and cool on a wire rack.
