This recipe for apple cake has a strange name but quite fitting actually. Here we have a recipe for an easy apple cake that takes the word "easy" to heart. There's no need to even take out an electric mixer because you'll get the job done with just a wooden spoon.

When apples are most plentiful, everyone is scurrying around trying to find new and different recipes that will utilize all the delicious kinds of apples. This is one fresh apple cake that really delivers. It's just about as easy an apple-nut cake recipe as you're likely to find, and it's chock full of apples.

You can almost throw together this simple recipe for apple cake, and it's large enough to serve many. I can tell you that it's also great tasting, so what's not to like, right? Have fun whipping this one up and enjoy the sensational taste that really took no time at all. If you don't tell anyone about the "no time at all" part, I certainly won't. Just smile and accept all the compliments.

Ingredients

2 cups granulated sugar

3 cups all-purpose flour

1 teaspoon baking soda

1/2 teaspoon salt

1/2 teaspoon cinnamon

1 cup vegetable oil

2 eggs

3 cups peeled and cored chopped apples

2 teaspoons vanilla extract

1 cup chopped nuts (I used walnuts, but you could use your favorite.)

Method

  • Preheat oven to 350°F.

  • Grease and flour a 13 x 9 x 2-inch baking pan

  • Whisk together in a large bowl the first 5 ingredients.

  • With a wooden spoon, in another bowl, mix together the rest of the ingredients.

  • Add the wet ingredients all at once to the dry ingredients.

  • With the wooden spoon, incorporate all the ingredients well. (Do not use an electric beater.) The batter will be quite thick.

  • Place the batter into the prepared pan, spreading evenly over the bottom of the pan.

  • I baked this cake for 60-70 minutes, but if your oven runs hot, check at about 55-60 mins.
