<Our Recipe for Almond Apple Cheesecake is definitely one that springs from being one of the basic cheesecake recipes to a sweet apple dessert with the taste and crunch of delicious almonds. This is one of the great apple dessert recipes that can well be the "star of the show" when served after dinner with coffee or tea. Drizzle a bit of caramel sauce over it and maybe a dollop or two of whipped cream...mmmmmm!

Ingredients

Crust Ingredients

1/2 cup softened butter
1/3 cup sugar
1 cup all-purpose flour

1/3 cup seedless raspberry jam


Cheesecake Filling Ingredients

2 8-ounce packages cream cheese
1/2 cup granulated sugar
2 large eggs lightly beaten
2 teaspoons vanilla extract



Topping Ingredients

1/3 cup granulated sugar
1/2 teaspoon cinnamon
3 cups thinly sliced, peeled tart apples (I used Granny Smith.)
1/2 cup sliced almonds


Method

Method for Crust

  • Preheat oven to 400°F and get out a 9-inch, Springform Pan.

  • Cream the softened butter and 1/3 cup of granulated sugar.

  • Add the flour and blend until the mixture resembles coarse crumbs.

  • Pat the crumbs on the bottom and 1 to 1-1/2 inches up the sides of the pan.

  • Put the pan on a cookie sheet.

  • Bake in the preheated 400°F oven for about 10 minutes, until golden. Cool on a wire rack.

  • When crust has cooled, brush seedless jam evenly over the bottom.


Method for Cheesecake Filling

  • Reduce oven to 350°F.

  • Beat together the cream cheese and sugar.

  • Add lightly-beaten eggs and vanilla extract.

  • Spread this mixture over the jam.


Method for Topping

  • Combine the sugar and cinnamon and set aside.

  • Prepare the apples and toss with the sugar-cinnamon mixture.

  • Spoon over the filling, and sprinkle with almonds.

  • Bake in the preheated 350° oven for 55 to 60 minutes or until center is almost set.

  • Cool on a wire rack and then chill in the refrigerator.

  • When ready to remove the pan sides, slide a sharp knife between the crust and the sides of the pan around the entire pan.

  • When crust has been loosened, open the sides of the pan and carefully remove them.
