Crust Ingredients
1/2 cup softened butter 1/3 cup sugar 1 cup all-purpose flour
1/3 cup seedless raspberry jam
Cheesecake Filling Ingredients
2 8-ounce packages cream cheese 1/2 cup granulated sugar 2 large eggs lightly beaten 2 teaspoons vanilla extract
Topping Ingredients
1/3 cup granulated sugar 1/2 teaspoon cinnamon 3 cups thinly sliced, peeled tart apples (I used Granny Smith.) 1/2 cup sliced almonds
Method
Method for Crust
Preheat oven to 400°F and get out a 9-inch, Springform Pan.
Cream the softened butter and 1/3 cup of granulated sugar.
Add the flour and blend until the mixture resembles coarse crumbs.
Pat the crumbs on the bottom and 1 to 1-1/2 inches up the sides of the pan.
Put the pan on a cookie sheet.
Bake in the preheated 400°F oven for about 10 minutes, until golden. Cool on a wire rack.
When crust has cooled, brush seedless jam evenly over the bottom.
Method for Cheesecake Filling
Reduce oven to 350°F.
Beat together the cream cheese and sugar.
Add lightly-beaten eggs and vanilla extract.
Spread this mixture over the jam.
Method for Topping
Combine the sugar and cinnamon and set aside.
Prepare the apples and toss with the sugar-cinnamon mixture.
Spoon over the filling, and sprinkle with almonds.
Bake in the preheated 350° oven for 55 to 60 minutes or until center is almost set.
Cool on a wire rack and then chill in the refrigerator.
When ready to remove the pan sides, slide a sharp knife between the crust and the sides of the pan around the entire pan.
When crust has been loosened, open the sides of the pan and carefully remove them.
