This quick easy crockpot recipe for Apple Bean Casserole will steal both your hearts and your taste buds. I know, you may read the ingredients over and think, "Okay, maybe I'll try it." Please do...and you'll keep this recipe on hand forever.

My husband was a complete fan of Boston Baked Beans...he even eats them for breakfast on occasion and in sandwiches. When I finished this Apple Bean Casserole, which is definitely one of the simple crockpot recipes, I just asked him to try them with a couple of turkey hot dogs one Saturday. He was watching something special on TV so was sitting in the livingroom to eat supper. All of sudden I got an unsolicited, "These beans are great" from the other room. Then I knew that I had come up with a winner.

This quick easy crockpot recipe for Apple Bean Casserole will serve you well on many occasions. There's no hiding the apples in this one and who would want to. They combine so well with the other ingredients that you will be making this quick easy crockpot recipe a favorite. I do hope you like it as much as we did...it can serve as a pot luck offering, or find itself on a buffet table. Please give it a try.

Ingredients

4 tablespoons butter

6 cups Granny Smith Apples, cored and cubed, but leave the peels on.

1/2 to 3/4 cup brown sugar (Of course, I used 3/4 cup.)

1/4 cup sugar

1/2 cup ketchup

1 teaspoon cinnamon

1 tablespoon molasses

1 teaspoon salt

24 ounce can Navy beans, undrained

24 ounce can Pinto beans, undrained

Method

  • Melt butter in a skillet; add apples and cook until the apples are tender.

  • Stir in the sugars, ketchup, cinnamon, cinnamon, molasses, and salt until well blended.

  • Add both types of beans and mix well.

  • Spray your crockpot with cooking spray and pour this mixture into it.

  • Cover and cook on high setting for 2 to 4 hours. This will depend entirely on your particular crockpot or slow cooker. Mine cooked along quite quickly, and the casserole was done in about 2 hours.

NOTE: Before serving, take cover off the crockpot and place on low setting until the juices thicken a bit.
