Our braised pork medallions with apples dish boasts healthy, thick tenderloin of pork slices, nicely seasoned and seared, with a tasty apple cider or juice sauce. When you're not in the mood for a long time in the kitchen, this recipe may be just the thing. It makes an especially nice dinner on a chilly or cold Sunday or evening.
Ingredients
1 pound pork tenderloin
1/4 teaspoon black pepper
1 teaspoon dried sage
1 teaspoon dried thyme
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1 or 2 tablespoons vegetable oil
1 onion, minced
1 large apple, cored and coarsely chopped
1/2 cup apple cider or juice
1 teaspoon cornstarch
2 tablespoons water
Method
Slice the pork tenderloin crosswise into 8 slices.
Mix seasoning together well and place in a flat-bottom dish or plate.
Heat the vegetable oil in a frypan with a lid.
Place each side of the medallions into the seasoning mixture; transfer each to the prepared frypan to brown well on both sides.
Remove from the pan to a plate and cover with foil to keep warm while you finish the sauce.
Add onion and apples to the frypan and saute until golden.
Add apple cider or juice to the frypan and heat to simmer.
This recipes serves 3 to 4 as is, but can easily be increased.
