Pork-Apple Stirfry

This great Pork-Apple Stirfry also came from the recipe box of my friend Audrey. She has been a consistent contributor to our site, and all of her recipes have been top-notch. This one will not disappoint you either. It's one of those dishes that you will go to many more times because it's so versatile and uses a nice, lean cut of pork loin. I happened to use a couple of boneless pork chops, but you could substitute pork tenderloin. The main thing is to have all visible fat removed and of course, choose a nice, boneless cut. A boneless pork roast might be a great place to look for a pound of boneless pork. Cut a one-pound piece from the main roast, and make sure all the fat is removed. Cut it up into the slices required for this dish. You could freeze the boneless pork roast and choose our easy pork loin recipe for that popular cut of pork. Ingredients
1 pound of boneless pork loin cut into strips
1 medium apple diced (Don't pare...the red is a good color contrast.
1 green pepper cut into thin strips
2 scallions sliced
2 tablespoons butter
1 cup water
1/2 cup apple juice
2 tablespoons low-sodium soy sauce
1 tablespoon vinegar
3 tablespoons brown sugar
1/2 teaspoon salt
1-1/2 cups "Minute Rice"
