Pineapple-Apple Chicken

Sweet-tasting Apple-Pineapple Chicken with a crunchy, toasted pecan topping.

Our Pineapple-Apple Chicken is a definite favorite of mine...I love the sweet sauce and crunchy pecans that top the boneless chicken.

This baked boneless chicken breast recipe livens the taste buds without making this a time-consuming project. I think you'll enjoy the subtle taste of the cinnamon in the chicken's coating...it really shines through.

Maybe a nice green vegetable would enhance the aesthetic qualities of the plate because the chicken dish itself does not show a great number of contrasting colors. Of course that can be fixed quickly with a cluster of flat-leaf or curly-leaf parsley, or just a sprinkling of chopped flat-leaf parsley...a little right on the chicken and a little around the outside of the plate.

Here you have an easy boneless chicken recipe, and I hope you'll give this wonderful Pineapple-Apple Chicken a try because it really "meets the mark" as both a family and guest-worthy main dish.

Ingredients

4 boneless, skinless chicken breast halves

1/4 cup flour

1/2 teaspoon cinnamon

1/2 teaspoon salt

3 tablespoons canola oil

1/2 cup apple cider or juice

1 tablespoon cornstarch

1/2 cup pineapple preserves

1/4 cup toasted pecans, coarsely chopped

1/4 cup toasted pecans, coarsely chopped to sprinkle on top

Method

  • In a shallow dish, place flour.

  • Sprinkle chicken with cinnamon and salt.

  • Dip both sides of chicken pieces in flour to coat, once piece at a time.

  • In a large frypan, place canola oil and heat over medium heat.

  • Add the pieces of chicken and cook, turning frequently, about 20 minutes or until lightly browned and a fork can be inserted with ease.

  • Remove chicken to heated serving platter and keep warm.

  • Pour off liquid from frypan and add apple cider or juice.

  • Slowly whisk in the cornstarch, mixing well.

  • Stir in pineapple preserves, add the first 1/4 cup of chopped pecans, and simmer until thickened, about 3 minutes, stirring as necessary.

  • Pour sauce over chicken and sprinkle the second 1/4 cup of chopped pecans on top.

This recipe yields 4 servings.
