Oatmeal Bar Cookie Recipe

This Oatmeal Bar Cookie Recipe is a deliciously quick version with the goodness of both apples and oatmeal.



Our Oatmeal Bar Cookie Recipe is made easy by using prepared Apple Pie Filling. The bottom crust and topping for this dessert is made from nearly the same mixture...pat it on the bottom of the pan and bake it for a nice crust; add oatmeal and crumble for the topping...good stuff, as they say.

There are many oatmeal bar recipes...this one is a delicious and quick version with the goodness of both apples and oatmeal. Cut yourself a nice square, heat for a few seconds in the microwave, and finish with a dollop of whipped cream, whipped topping, or a scoop of ice cream. Go ahead and impress your guests with this delicious Oatmeal Bar Cookie Recipe.

Of the many oatmeal recipes for desserts, I think this one rates right up there. I happened to have our daughters, niece and guess who...our now
9 1/2-month-old "granddaughter," Sarah, for lunch the other day, and "Mommy" says absolutely yummy. Oh, and by the way, that compliment was completely unsolicited by the "Apple Lady," here.

Ingredients

1 cup vegetable shortening (Like Crisco)

1 cup firmly-packed brown sugar (I used the light brown
but either is fine.)

1/2 teaspoon vanilla extract

2 cups all-purpose flour

1/8 teaspoon salt

1/2 cup quick or old fashioned oatmeal (Not instant)

1 large can or jar of apple pie filling



Method

  • Preheat oven to 375°

  • Beat the shortening, brown sugar and vanilla together
    in a large mixing bowl until the mixture is light and fluffy.

  • Mix in the flour and salt.

  • Take half of your mixture and pat it onto the bottom of your pan.
    The vegetable shortening will work so the crust doesn't stick.

  • Bake in the preheated oven for 10 minutes, and let it cool.

  • While crust is cooling, add the 1/2 cup of oatmeal to the remaining mixture and crumble as finely as possible. I find it bakes and slices easier that way.

  • When crust has cooled, spread your apple pie filling evenly over it.

  • Sprinkle the topping mixture evenly over that.

  • Bake in your preheated oven for another 15 minutes, until the filling is hot and the top is lightly browned to your taste.

  • Cool, slice, and enjoy.
