Our Oatmeal Apple Cookies Recipe is sure to shoot to the top of your Best Cookies Recipe List.

I say this for a variety of reasons: these are great-tasting cookies; you're getting the benefits of both oatmeal and apples; and if you enjoy chewy cookies, these definitely fill the bill.

Although they're optional, I found that the chopped walnuts just added to the overall texture, flavor and appeal of the cookies; and the glaze is sweet but not too sweet, raising the cookies to a new level.

I have several people who have taste-tested this apple oatmeal cookie, and they received a rating of 5 stars from each one.

Ingredients

Cookies

1/2 cup butter, softened

1/4 cup shortening

1/2 cup of granulated sugar

3/4 cup packed light brown sugar

2 eggs

1 teaspoon vanilla extract

2 cups old-fashioned oats

1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg

1 teaspoon baking soda

1 1/2 cups all-purpose flour

2 medium apples, peeled and diced

1 cup chopped walnuts (Optional)

Glaze

2 tablespoons butter, melted

1 teaspoon vanilla extract

2 cups confectioner's sugar

About 1/4 cup half-and-half or milk


Method

Glaze

  • In a small bowl, place melted butter and vanilla extract.

  • Sift the confectioner's sugar into that mixture and stir.

  • Add the milk a little at a time, stirring after each addition until the desired consistency is reached. If you want a thinner glaze, just add a bit more milk.

  • Cover and set aside for now.

Cookies

  • Preheat oven to 350°F.

  • In a large bowl, beat together the 1/2 cup butter, shortening, and both types of sugar until light and fluffy.

  • Add eggs one at a time, beating well after each addition.

  • Blend in the vanilla extract.

  • In another bowl, mix the oats, spices, baking soda, and flour.

  • Stir these dry ingredients into the wet ingredients, only until blended.

  • Add apples and walnuts, and gently incorporate them into your dough.

  • On ungreased cookie sheets, drop the dough by rounded tablespoons, about two inches apart. (I used a small ice cream/cookie dough scoop.)

  • Bake for between 13 and 17 minutes (Mine took just about 14 minutes, but this will vary according to your oven.) The edges should be golden and the centers set.

  • Leave the cookies on the cookie sheet for about 1 minute before removing from sheet to cool on a wire rack.

    Kitchen Tip: Put waxed paper under the cooling racks and you'll be able to drizzle the glaze right over the cookies and allow the excess to drip onto the waxed paper. Easy cleanup!

  • Use a spoon to drizzle the glaze on slightly-warm cookies, and then allow them to cool completely. (Unless you can't resist trying one.)
