Low Calorie Recipe for Apple Corn Muffins

This recipe makes 12 muffins and each one is 130 calories.

Ingredients

2 cups all-purpose flour

1/2 cup yellow cornmeal

1/4 cup packed brown sugar

1 tablespoon baking powder

1/4 teaspoon salt

3/4 cup fat-free milk

2 egg whites

1 apple, peeled and chopped

1/2 cup corn kernels - I used thawed, frozen corn


Directions

Preheat the oven to 425 degrees. Line a 12-cup muffin pan with foil liners. These muffins stick to the paper ones.

In a large bowl put the dry ingredients - flour, cornmeal, brown sugar, baking powder and salt. Stir with a large spoon to make sure all these ingredients are mixed well together.

In another bowl, whisk together the milk and egg whites. Add this, the chopped apple, and corn to the dry ingredients.

It takes a little time, but be sure to mix all the ingredients together until everything is moist.

Fill each muffin cup about 2/3 full and bake about 20-30 minutes. When you touch the muffin tops, they should pop back up.

I used a dark muffin tin and my muffins were done way too early. I think I should have lowered the temperature to 400. Just a thought if you use the dark muffin tins.

These muffins are made better because of the chopped apple and the kernels of corn. Having something to chew on is satisfying.
