Homemade Pancake Recipe B & B Puffed Apple Pancake
This homemade pancake recipe will surely find its way to your breakfast table many times. It's a basic pancake recipe for a puffed pancake that you will become more and more proficient at after you make it a couple of times.
It actually becomes a relatively-easy pancake recipe and could well make some weekday morning a special one. Maybe the family could enjoy some fresh fruit to begin their day while your luscious pancake bakes.

Ingredients
2 Granny Smith or other cooking apples, peeled, cored, and cut into 1/4-inch-thick slices.
1 tablespoon lemon juice
6 large eggs
1 cup whole milk
1 teaspoon vanilla extract
1 cup all-purpose flour
2 tablespoons sugar
1/4 teaspoon salt
1/4 cup (packed) brown sugar
1/4 cup granulated sugar
1-1/2 teaspoon ground cinnamon
4 tablespoons (1/2 stick) butter
Method
Preheat oven to 475°F
Toss apple slices with lemon juice and set aside for now.
Whisk eggs, milk, and vanilla together; add the flour, 2 tablespoons granulated sugar and 1/4 teaspoon salt, mixing until the batter is nearly smooth. There will be small lumps of flour remaining.
Mix brown sugar, 1/4 cup granulated sugar, and cinnamon together in a separate bowl.
In an oven-proof skillet, fry apples for 2 to 3 minutes, and pour batter over apples.
NOTE: I used just a small pan for frying the apples, transferred them to my pannekoeken pan and went from there. When the pancake is baked, it just slides right out.
Put pancake in the preheated oven for 15 minutes; lower the temperature to 425°F and put sugar-cinnamon blend on the top of the pancake.
Bake for 8 - 10 minutes at 425° until the pancake is nicely browned. Slide the pancake out onto a serving dish or if necessary, just cut it into pieces and serve from your oven-proof skillet. I'm sure either way it will be delicious.
