This Homemade Applesauce Recipe is excellent anytime, but it especially makes me think of the local, fall harvest of Cortland and Macintosh apples. Everyone is out at the local farm stands grabbing up as many containers of apples as they can fit into their cars. For us that's the official beginning of our "making and baking--bulk style."

You know what? I think when you find yourself making your own applesauce, it's very likely that you won't want to return to the processed type you find in jars at the supermarket.
Ingredients
16 Apples, peeled, cored and cut into uniform chunks 1 cup water 1/4 cup brown sugar or to taste

Method
Wash, peel, core and cut apples into uniform chunks. As illustrated in the photograph, peel the apple first, and cut four quarters from around the core. Place each of the quarters (flat side down) on your cutting board and slice into smaller, uniform chunks.
Put apples and the 1 cup of water into a large pan.
Cover pan and on medium heat, bring contents to a boil. If you use a higher heat, it could cause the apples to stick to the bottom and scorch. You can also mix with a wooden spoon at times during this process, also to prevent sticking and scorching.
When the apples and water reach a boil, reduce heat and simmer for about 20 minutes, stirring occasionally. At this point, the apples will be mushy and easily crushed with a wooden spoon.
Take from heat and using a potato masher, mash the apples, leaving them as smooth or chunky as you like.
If you choose to make the applesauce to serve now, and you love unsweetened applesauce, you just let the sauce cool a bit, and you have applesauce for supper.
If you have a bit of a sweet tooth, you could add 1/4 cup of brown sugar or to taste, allowing it to sit for about 5 minutes to blend the flavors.
