Holiday Cupcakes Apple Coconut Cupcakes

These Holiday Cupcakes are very versatile Apple Coconut Cupcakes. They come together quickly, with help from a yellow cake mix, but the taste is made distinctive by the addition of shredded coconut and freshly-chopped apples. I needed a quick batch of Valentine Cupcakes. and this recipe was perfect. The colorful cupcakes took on a Valentine's flair just by coloring the coconut on top red. I'm sure you can see the possibilities here: St. Patrick's Day, get out your green food coloring for the top coconut, Christmas, do the tops green and red for a lovely, holiday, pairing of colors. I know you'll come up with others, like pastel colors for springtime or orange for the fall. I did make a batch of these cupcakes using a heart-shaped muffin pan, and that worked out well. You could do some simple cake-decorating techniques with the frosting, I use the large and smaller star tips to achieve a finished, but simple, look. Again, if you would prefer, just sprinkle the tops with red coconut.

1 pkg. yellow cake mix
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1-1/2 cups shredded coconut
3 cups chopped apples, pared and cored
