Holiday Cupcakes
Apple Coconut Cupcakes

These holiday cookies taste, very simply, moist and delicious, with an easy variety of colorful coconut flakes to give a finished look.



These Holiday Cupcakes are very versatile Apple Coconut Cupcakes. They come together quickly, with help from a yellow cake mix, but the taste is made distinctive by the addition of shredded coconut and freshly-chopped apples.

I needed a quick batch of Valentine Cupcakes. and this recipe was perfect. The colorful cupcakes took on a Valentine's flair just by coloring the coconut on top red. I'm sure you can see the possibilities here: St. Patrick's Day, get out your green food coloring for the top coconut, Christmas, do the tops green and red for a lovely, holiday, pairing of colors. I know you'll come up with others, like pastel colors for springtime or orange for the fall.

I did make a batch of these cupcakes using a heart-shaped muffin pan, and that worked out well. You could do some simple cake-decorating techniques with the frosting, I use the large and smaller star tips to achieve a finished, but simple, look. Again, if you would prefer, just sprinkle the tops with red coconut.

Ingredients

1 pkg. yellow cake mix

1 teaspoon cinnamon

1/4 teaspoon nutmeg

1-1/2 cups shredded coconut

3 cups chopped apples, pared and cored


Method

  • Preheat oven to 350°F.

  • Pare, core and chop the apples.

  • Toss apples with just a bit of lemon juice to retain their white color.

  • Whisk cinnamon and nutmeg into the cake mix.

  • Prepare cake as directed on the package.

  • Fold in the coconut and chopped apples.

  • Fill lined muffin tins 3/4 full of batter.

  • Bake in preheated oven for 20-25 minutes.

  • Fill with Buttercream Frosting, which is located at the bottom of the Apple Pie Cupcakes page.
