Fresh Apple Cake Recipe
with Peanut Butter Frosting

Delicious fresh apple cake with peanut butter frosting.

Here we have a fresh apple cake recipe that you will find a little different, but nonetheless delicious...there's absolutely no cinnamon, nutmeg or other "usual" seasoning found in apple cake recipes. Although walnuts are optional, this apple cake recipe lends itself well to the addition of walnuts or even peanuts, especially if you're teaming it up with the peanut butter frosting.

Did you ever cut up an apple and spread peanut butter on each piece before eating? I don't know why I didn't think of this yummy combination before. Our peanut butter frosting pairs so well with this apple cake. Give it a try...apple-solutely wonderful.

Whether you choose to make this an apple-nut cake right away is a matter of choice, but just be sure to put this recipe on your "to do" list to try. My taste-testers gave a score of 5 apples for this fresh apple cake and its peanut butter frosting.

Ingredients

2 Tablespoons vegetable shortening

1 cup sugar

1 egg

1 teaspoon vanilla extract

1/2 cup milk

1-1/2 cups flour

1 teaspoon baking soda

1 teaspoon baking powder

3 cups of pared, cored and diced apples

1/4 cup walnuts or peanuts, chopped (optional)

Method

  • Preheat oven to 350°F

  • Cream together the shortening, sugar and egg.

  • Add vanilla extract and mix together.

  • Whisk together the flour, baking soda and baking powder.

  • Add these dry ingredients alternately with milk to the wet ingredients.

  • Add diced apples and walnut or peanuts, if desired.

  • Spray a 13 x 9 x 2 baking pan with non-stick cooking spray.

  • Bake in the preheated oven for 30-40 minutes, making sure the center is done by using the toothpick test - toothpick comes out clean when inserted into the center of the cake.

Easy Peanut Butter Frosting

Ingredients

3 tablespoons butter, softened

1/2 to 3/4 cup peanut butter

2 cups sifted confectioner's sugar

6-8 tablespoons milk, added 1 or 2 tablespoons at a time, until frosting is the desired consistency.

Method

  • Cream butter and peanut butter together.

  • Sift in about 1 cup of sifted confectioner's sugar at a time. If frosting is dry, add some of the milk before adding the other cup of confectioner's sugar. Continue to add the milk as needed for the frosting to reach the desired consistency.
