From our Easy Party Appetizers, I know you'll love these tasty little pork apple meatballs. They are great make-ahead appetizers...you can put them together at your leisure, pack away a couple of batches in the freezer, and keep some apple jelly on hand to melt for their delicious sauce at serving time.
These little "bites" have only 44 calories each, pack 3 grams of protein, only 1 gram of fat, and no saturated fat. They are, however, so tasty that you may find yourself wanting more and more. I know they're small, but you and your guests can enjoy a nice portion and still maintain your healthy lifestyle.
If you're making a double or triple batch of these meatballs, either dig out your chafing dish or only put out a limited number while keeping the rest warm in the kitchen. Your trusty microwave may be helpful in warming some for now and warming more later, too.

Ingredients
1 pound of lean ground pork
1 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon pepper
1/2 cup shredded, pared apple
1/4 cup of soft wheat or rye bread crumbs
1/4 cup finely chopped walnuts
1/2 cup water
1/2 cup apple jelly
Method
Sprinkle the pork with salt, cinnamon and pepper.
Mix in lightly your apple, bread crumbs and walnuts, making sure that all the ingredients are thoroughly mixed together.
To maintain the 44 calories and other nutritional values mentioned above, this mixture should make 40 meatballs. I, however, preferred the higher values and made only 30 instead.
If making 40, use only a scant tablespoon for each...if making 30, a good tablespoon of the mixture can be used.
In a large skillet, brown the meatballs. Only do half at a time if they will be crowded in the pan.
After browning, put all the meatballs into the pan, add water, cover tightly, lower heat and allow to cook slowly for 15 minutes.
Removed the meatballs and keep warm while stirring the apple jelly into the skillet to slowly cook until it's melted.
When meatballs are to be served, pour sauce over them.
