by Penny Finn
(Massachusetts)

This cake is just chock full of beautiful, sliced apples.

This cake is just chock full of beautiful, sliced apples.

I hope to start the ball rolling by adding one of my own favorite fresh apple cakes. From the picture you can see how many layers of nice, fresh apple slices are packed into this cake.

Please give it a try and comment on and/or rate the recipe...I'm looking forward to hearing how yours comes out. If you have a recipe of your own, by all means just type it right in like I did...it only takes a couple of minutes and we all benefit. I'd love to upload your own personal, new Fresh Apple Cake Recipe Page.

So here's the recipe.

Ingredients

4 eggs

2 cups sugar

1/2 cup vegetable oil

2 cups flour

1/2 teaspoon salt

4 teaspoons baking powder

4 teaspoons cinnamon

2 teaspoons vanilla extract

4 apples, pared, cored and thinly-sliced

1 cup chopped walnuts

Mixture of 2 tablespoons of sugar and 1 teaspoon cinnamon.

Method

1. Preheat oven to 350 degrees F and lightly spray a 13x9x2 pan with non-stick cooking spray.

2. Beat the eggs together in a large bowl.

3. Gradually mix in the sugar and oil.

4. Sift together the flour, salt, baking powder and cinnamon and add to the wet ingredients.

5. Add the vanilla extract.

6. Add in the sliced apples and chopped walnuts.

7. Spread the batter evenly over the bottom of the prepared pan.

8. Sprinkle the top with cinnamon sugar.

9. Bake in the preheated oven for 50-60 minutes. Test by sticking a toothpick into the center...the cake is
done when the toothpick comes out clean. Enjoy!
