Easy Apple Coffee Cake

This delicious easy apple coffee cake will lure you into a coffee break.



Our Easy Apple Coffee Cake almost sends an invitation to grab a hot cup of coffee or tea and "set a spell." You can see for yourself that it's great looking with all those apples on top...well, there's a layer in the middle, too. Serve this warm from the oven or microwave for a few seconds and top with a little whipped cream.

No matter what you need to break away from, our recipe for apple coffeecake will be right there to lure you away. It's a nice, substantial type of cake that will surely "hit the right spot" and encourage you to go back to whatever you're doing with gusto. Not many a recipe for apple cake can send you back to work "with gusto," right?

We're lucky that apples are plentiful all year 'round so you're sure to find the perfect ones for our fresh apple cake recipe. Why not whip up our easy apple coffee cake and bring it to work with you. You'll be most popular, I'm sure.

Ingredients

1/2 cup light brown sugar

2 tablespoons flour

2 tablespoons butter or margarine

1 teaspoon cinnamon

1/2 cup sugar

1/4 cup shortening

1 egg

1/2 cup milk

1-1/2 cups unsifted flour

2 teaspoons baking powder

1/2 teaspoon salt

2 cups thinly sliced apples

Method

  • Preheat oven to 375°F and grease a 9-inch square pan.

  • Blend the brown sugar with the 2 tablespoons of flour, butter and cinnamon in a small bowl and set aside.

  • Place sugar, shortening and egg in a medium to large bowl and beat thoroughly. Add milk.

  • Mix 1-1/2 cups flour, baking powder and salt together and stir into the egg mixture. The batter will be thick and somewhat sticky.

  • Spread 1/2 the batter in the prepared pan.

  • Cover with 1/2 the sliced apples and top with 1/2 the brown sugar mixture.

  • The second half of the batter will be put on top of the apples and topping. I used a baggie on my hand to pat small pieces of batter into place, covering the apples. Don't be too fussy with this part...just do this step quickly to get the batter as evenly as you can across the top.

  • Now you'll put the rest of your apples and top with the rest of the brown sugar mixture. I dotted the top with a few small pieces of butter, but that's optional.

  • Mine was done in just about 45 minutes but we'll keep a window of from 40-50 minutes, depending on the way your particular oven bakes. You can check the doneness of the cake using a toothpick, making sure you go through the apples and test the top layer of cake. It's done if you don't see any batter on the toothpick.
