Dan's Apple Brownies are named after Dan, a young man dear to our hearts, who expressed a particular fondness for these brownies. From that day to this, I made sure that his name would always define this chewy brownies recipe. It's not quite a blonde brownie recipe, but since this apple recipe does not contain any chocolate, it has a lighter appearance, as you can see from the photograph. This is a larger-quantity recipe...just right when you need a dessert for a potluck dinner, you want to bring a batch of goodies to work, or you’re having a gang over for a barbecue. Actually, these would be a great idea to bring to an event at your child's or children’s school. How often do youngsters come crashing through your back door announcing that there’s going to be a Halloween Party on Friday or another occasion on some other day. With this recipe for Dan's Apple Brownies, you're always prepared.
This brownie itself has a mouthwatering taste—so chewy and moist. Perfect for children and/or adults alike. Those teachers really enjoy brownies, too, you know. The addition of raisins and nuts makes this "tops" in my book in the "recipes for brownies" category.
Another nice feature is that Dan’s Apple Brownies can be made days or even weeks ahead. Apple desserts really lend themselves quite well to freezing, with no adverse effect to the taste. Of course, they have to be properly wrapped for the freezer, or tray frozen after slicing into serving sizes and put in freezer bags for longer-term storage.
Ingredients
3 cups Granny Smith Apples, peeled and chopped*
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon
1-1/4 cups vegetable oil
3 large eggs
2 cups granulated sugar
2 teaspoons vanilla extract
1 cup chopped walnuts
If you like raisins, add 3/4 cup, but this is optional.
*Note: You may want to sprinkle a little lemon juice on the apples to be sure they're kept nice and white with no discoloration.
