Our crockpot stuffing recipe has come to my rescue many times. Sometimes, especially during the Holiday Season, I get overly zealous and plan a menu that seems like it will work. However, looking a little more closely, I find there's only so much room in the oven and only so many burners on the stove. That's when our crockpot stuffing recipe lets us breathe a sigh of relief.
My family just loves stuffing, so in addition to the stuffing I roast in the turkey, I always need more. My crockpot stuffing recipe can be done at exactly the same time as the turkey and there's more than enough for everyone. I have a daughter who would be extremely disappointed if she didn't have leftover "sides" to dig into the next day.
You know, if someone were to ask how to make stuffing, I would be at a loss because there are myriad recipes, not only for turkey stuffing but for side dishes to pork, boneless chicken, and even beef. That's also a great attribute of this crockpot stuffing recipe...you can serve it with so many other dishes by including and/or excluding whichever ingredients you choose. Hmmm, well maybe you'd always want to include the apple because again, this is an apple recipe site.
Ingredients
12 cups of dry bread cubes
1/2 cup butter
2 cups chopped onions
2 cups of chopped celery (optional)
1/4 cup fresh, chopped parsley or about 1 teaspoon dried parsley
12 ounces fresh mushrooms, sliced (optional)
1 teaspoon poultry seasoning
1-1/2 teaspoons salt
1/2 teaspoon black pepper
1-1/2 teaspoons dried sage
1 teaspoon dried thyme
1 cup red apples, chopped
2 to 4-1/2 cups of chicken broth The amount you will use will depend on your own taste and just how dry your bread cubes are.
2 eggs, beaten
Method
Melt butter in a skillet over medium heat. Cook onions, celery, mushrooms and parsley in the butter, stirring frequently.
Spoon cooked vegetables over bread cubes in a very large mixing bowl. Season with poultry seasoning, salt, pepper, sage, and thyme. Toss these ingredients together well.
Incorporate apples into the mixture.
Pour enough broth in to moisten, and mix in the eggs.
Spray your crockpot with cooking spray to make cleanup easier.
Transfer the mixture to your crockpot.
Cook on high for only 5 minutes or so and reduce heat to low. Cook on low for 4-8 hours. My stuffing was all set at the end of 4 hours.
