Caramel Apple Bars

Warm Caramel Apple Bars with Whipped Cream

These delightfully-gooey caramel apple bars have a taste that’s reminiscent of the caramel apple itself. Having just eaten one of these from this apple bar recipe, I can tell you that warm or cold with a dollop (or more) of whipped cream or topping, the phrase “I bet you can’t eat just one” immediately comes to mind.

Sometimes a caramel sauce is “made from scratch,” which we probably will do for other dishes, but I utilized a bag of caramels for this one. I hope you have a “volunteer” who will help you by unwrapping the caramels and you’re half-way there. I think perhaps anyone who participates in the “work” should probably earn at least a taste of the finished dessert, too, right? Okay now, let’s get those caramels unwrapped while you whip up this apple and oatmeal bar cookie recipe, and enjoy.

Ingredients

1 cup packed brown sugar

1/2 cup softened butter

1/4 cup vegetable shortening

1-3/4 cup all-purpose flour

1 teaspoon salt

1/2 teaspoon baking soda

1-1/2 cup quick-cooking oats (not instant)

4-1/2 cups coarsely chopped peeled tart apples (3 medium)

3 tablespoons all-purpose flour

1 bag (14 ounces) caramels

1/4 cup milk



Method

  • Heat oven to 400°F

  • In a large bowl, cream brown sugar, butter and shortening.

  • Sift flour, salt, and baking soda into a smaller bowl.

  • Add oats.

  • Stir the dry ingredients into the creamed mixture.

  • Reserve 2 cups of the final oat mixture and press the remaining amount into an ungreased 13x9x2 pan.

  • Toss apples with 3 tablespoons of flour and place evenly in pan.

  • Heat caramels very slowly with 1/4 cup of milk, stirring frequentlyuntil creamy and smooth.

  • Pour caramel sauce evenly over apples.

  • Place reserved oat mixture evenly on top, pressing down slightly.

  • Bake 25 to 30 minutes or until topping is golden brown and apples are tender.

  • Recipe yields 24 bars - more or less depending on the size.
