This Cabbage Casserole Recipe is quite versatile. you can buy a small slice of ham specifically for the recipe or it does double-duty when you have leftover ham from a Sunday or Holiday dinner.
As ham casseroles go, this is one of the tastiest and easiest, and what's not to like about that, right? I made this vegetable casserole with leftover ham, and to go alongside or beneath it on the plate, I made some nice egg noodles.

Ingredients
1 medium onion, chopped
1 stalk celery
2 1/2 cups cooked ham, cubed
1 medium cabbage, shredded
2 apples, sliced
Method
Preheat oven to 350°F; spray a skillet with cooking spray.
In the skillet, saute the onion and celery until slightly soft.
Add the ham, and toss lightly while warming the ham.
Spray a 2-quart casserole dish with cooking spray, and layer half the cabbage on the bottom.
Follow that with a layer of the sliced apples.
Next, add all your meat mixture, followed by the rest of the shredded cabbage and finally, the rest of the apple slices.
Cover and bake in the preheated oven for 1 hour.
Serve with hot noodles or potatoes.
