Applesauce Fudge Brownie Mix Recipe
Would a brownie mix recipe taste as fudgy and chewy as this one does? For all the skeptics in the world, my answer is a resounding, "Yes." Oh my, do give the "kicked up" brownie mix variation with the raspberry topping and toasted, sliced almonds a try and see what I mean.
I gave this recipe a try over the weekend, and it gave me the choice of making cake-like or fudgy brownies. From the photo above, you can see I chose the fudgy ones. I just have to include a little Yummmmmmm, and need I say more?
This rich brownie mix dessert is great after lunch, dinner, or before bedtime. I can vouch for that, and I added a nice glass of cold milk to go along with it.
Ingredients
1 21-ounce brownie mix unprepared (I did not add the Hershey Fudge Packet included in the Brownie Mix...just the dry mix.)
1 cup unsweetened applesauce, drained to yield about 2/3 cup. Please see note.
Note:If you prefer the brownies cake-like, add in the applesauce straight from the jar. If you prefer them chewy, drain the applesauce for 2 hours (4 hours was called for in the original recipe.) in the refrigerator. The applesauce will lose about 33% of its bulk.
4 tablespoons low-fat buttermilk (I used 1 tablespoon and 1 teaspoon of dry buttermilk powder with 4 tablespoons water.)
1 large egg
seedless raspberry preserves (Please see variation below.)
toasted almonds, thinly sliced
Method
Preheat oven to 350°F and spray the bottom of a 13 x 9 pan with nonstick cooking spray.
In a large bowl, combine the first four ingredients. Beat by hand 50 strokes. Batter will be grainy and slightly shiny.
Pour into your prepared pan.
Bake for 25 to 30 minutes or until the center is done. Brownie will not come out completely clean when tested with a toothpick. Don't over bake them as the brownies continue to bake as they cool.
VARIATION: While brownies are still hot, spread 6 or 7 tablespoons of seedless raspberry, regular raspberry, or raspberry "just fruit" preserves on the top.
Place on cooling rack to cool.
