Broccoli-Apple Salad

Refreshingly delicious broccoli-apple salad.

This Broccoli-Apple Salad immediately came to mind last weekend because we experienced some very unseasonal weather. The temperature is normally around 60 or so degrees, but summer paid us an early, short visit. For some three or four days, we had temperatures that soared into the high 80's and low 90's.

I couldn't wait to have a barbecue before the weather changed back to spring again. What could I make that would go better with that type of food than our wonderful broccoli salad recipe. I've tried to make it a bit healthier, by letting you know what I've changed but I'll also note the original ingredients for this broccoli bacon salad.

Either way, this is a good-tasting, versatile salad that’s cool and refreshing on a warm day. It complements everything you might choose to barbecue, too. Oh, this salad is very good in any season, so it doesn't need to be saved for summer or summer-like weather. It would be a great addition to a buffet.

Ingredients

3 or up to 6 medium tart apples, chopped

4 cups broccoli florets

1/2 cup chopped white or red onions

1/2 cup golden or dark raisins

1 1/2 cups mayonnaise (I used light mayonnaise.)

2 tablespoons white vinegar

2 tablespoons sugar (The equivalent amount of sugar substitute can be used.)

1/2 teaspoon lemon juice

1/4 teaspoon salt

5 to 10 bacon strips, cooked and crumbled (optional)

1/2 cup of walnuts, pecans, or other type of nut, chopped

Method

  • Before mixing the first four ingredients in a large mixing bowl, sprinkle the apples with a little lemon juice to maintain their color.

  • Whisk together in another bowl the mayonnaise, vinegar, sugar or sugar substitute, the 1/2 teaspoon of lemon juice, and salt.

  • Put this dressing on your salad, mixing carefully but well to make sure every ingredient is coated.

  • Chill for at least 2 hours. Just before serving, mix in the bacon and walnuts, if desired.

  • I used some extra pecans and raisins to garnish the top.
