Bookworm Apple Bark

In Bookworm Apple Bark, we have a great-tasting, healthy breakfast or snack any time of the day or night. It also carries the tastes that are popular with children and adults alike.

This apple snack is quick to make, and each serving provides an excellent source of fiber and a good source of vitamin C.

This recipe is one of the healthy fast recipes that most older children could "pitch in" and put together for the family. What a help that will be some morning, and the whole family can enjoy this sweet, crunchy, and healthy breakfast treat.

Served for breakfast, it promises to give the students in your family that extra boost that will no doubt keep them alert in class all morning. The benefits are no less if we happen to be adults either.

Once again, our friends at "Fruits and Veggies-More Matters" have come up with a great idea.

Ingredients

1 Granny Smith Apple

1 tablespoon peanut butter

2 1/2 tablespoons golden or black raisins

1 1/2 tablespoons dried sweetened cranberries

1 small bunch of fresh chives or fresh parsley (optional plate garnish)

Method

  • Cut apple into four quarters, starting at the stem.

  • Remove the core by cutting away to leave a flat surface on the apple quarter. Be careful not to cut too much of the edible portion of the apple away.

  • Drop and slightly spread the peanut butter on apple quarters.

  • Mix together the raisins and dried cranberries then sprinkle on peanut butter.

  • Garnish with either one-inch pieces of chives or parsley, if you choose.

    Serves: 1
