I made this for dinner last night to rave reviews. For three of us, I made two pizzas and had to cut into a few slices of the second one.
I didn't have a category that this would slide into nicely...all I knew was that it was so good I had to offer it to my visitors. So here it is! I guess it can stand alone for now. It is surely a big apple pizza...big on savory taste.
The original recipe for Bistro Apple Pizza I was given permission to use from the Washington Apple Commission. Because of particular likes and dislikes in my own household, I made a few adaptations. I will make both available to you, so you can make your own choices.
The instructions are for one pizza only, but the amounts are easily doubled or tripled.
Ingredients
2 teaspoons garlic, minced
2 tablespoons olive oil
1 12-inch prepared pizza dough crust
2 cups fresh spinach, coarsely chopped
1 1/2 cups Red Delicious, Golden Delicious, or Granny Smith apples, peeled and thinly sliced (or chopped)
*I used Golden Delicious and they worked out very well.
1 cup shredded low-fat, part skim Mozzarella cheese
1 cup crumbled Blue, Gorgonzola or Roquefort cheese.
*I left this out, but if you enjoy one of these cheeses, by all means add it to the mix. I'm sure you'll love that combination, too.
1/2 cup shredded parmesan cheese
*I used 1 cup of Pecorino-Romano cheese one time and Parmigiano-Reggiano another time. Both were incredible...it just depends on what you like.
1 teaspoon dried leaf oregano
* These are the changes I made to the original recipe. I thought you might like a few different choices, but I'm sure the original recipe is wonderful, too.
Original recipe indicated that one pizza serves 4.
