Beef and Cabbage Casserole

Appealing and easy meal for beef and cabbage casserole.


Our Beef and Cabbage Casserole is a "tried and true" blending of both a cabbage casserole and a hamburger casserole. You find this delicious twosome in stuffed cabbage and many other ground beef recipes.

Who doesn't like the idea of putting most of your meal in one pot. Put down some baked or mashed potatoes, and you have a perfect offering for tonight's meal.

Our cabbage casserole recipe lends itself very well to the addition of ground beef. It seems to me that "back in the day" many people made "Lazy Man Pierogi," so the combination has certainly been around for a while. I do hope you'll give it a try for a quick, easy weeknight meal.

Ingredients

1 pound lean ground beef

1 medium onion (chopped)

1 head cabbage, cut into smallish pieces for faster cooking

1 cup of 98% fat-free cream of mushroom soup

1/2 cup shredded cheddar cheese (optional)

2-3 tablespoons apple juice

salt and pepper to taste



Method

  • Preheat oven to 400°F and spray a 1-1/2 to 2 quart size casserole dish.

  • Spray a large, non-stick frying pan with cooking spray, brown the ground beef and add the chopped onions.

  • Stir well and add the cut cabbage.

  • Cover and cook this mixture for about 8 or 10 minutes, or until the cabbage becomes soft and tender.

  • If you are opting for the shredded cheese, add it with the mushroom soup, apple juice, salt and pepper.

  • Mix well and transfer to a prepared casserole dish.

  • Bake in the preheated oven for about 15 minutes.

  • Remove casserole and serve.
