Banana Cake Recipe made better with the addition of apples.

Our Banana Cake Recipe has only been heightened by the addition of the star of our show...apples. What a combination for making a super-moist, delicious, easy apple cake.

You could actually just sift a little powdered sugar on the top and you would have a wonderful fresh apple cake that would be great to take with you to work for coffee break. HOWEVER, those of us with that sweet tooth, couldn't resist spreading a nice, thick layer of Cream Cheese Frosting on the top.

This banana cake recipe would be one of the easy banana cake recipes, but why not put an extra layer of moist goodness by adding just one diced apple. Still an easy recipe, right?

Ingredients

1 cup granulated sugar

1/2 cup light brown sugar, firmly packed

1/2 cup butter, softened

2/3 cup mashed banana

3 large eggs

2 cups all-purpose flour

2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

3/4 cup water or apple juice

1 Granny Smith apple, peeled, cored and diced

1/2 cups chopped pecans (Optional)

1/2 cup golden raisins (Optional)

Method

  • Preheat oven to 350° and grease and flour a 13x9x2-inch pan.

  • Beat together sugars and softened butter until creamy.

  • Beat in your mashed bananas.

  • In another bowl, beat eggs until very foamy and beat them into the butter-sugar-banana mixture.

  • In another bowl, whisk together the flour, baking powder, baking soda and cinnamon.

  • Add the dry ingredients to the sugar-egg mixture alternately with the 3/4 cup water or apple juice, beating until smooth.

  • Fold in the diced apple, pecans and raisins.

  • Spread batter evenly in the prepared pan.

  • Bake in preheated oven for 35-40 minutes or until a toothpick comes out clean when inserted in the center of the cake.

Kitchen Tip: When you have bananas that are overripe and no time to use them in a recipe, put them right in your freezer where they will be just fine until you need them. When you defrost them, they're already mushy, so you can just measure and add directly to your recipe. I used two bananas that were previously frozen in this recipe...no waste of overripe bananas and perfect additions to this recipe.
