Our Baked Pork Chop Recipe has it all...it's delicious and is actually an easy pork recipe. No making gravy when it's time to serve dinner either. With the addition of the applesauce and and a little flour at the beginning, you magically have gravy with your chops.
Using boneless pork chops, trimmed of all fat, would also make this rather a healthy choice for a main dish. Having only two tablespoons of flour added in, plus choosing unsweetened applesauce for 5 or 6 boneless trimmed pork chops, sounds healthy to me.
Now, what a great baked pork chop recipe...tasty and good for you, too...as long as you limit yourself to one pork chop. Everything in moderation, right?
Ingredients
5 or 6 pork chops (I chose to use boneless, trimmed chops.)
1/2 teaspoon salt
Pepper to taste
1 cup applesauce
1/4 cup ketchup
2 tablespoons flour
3/4 cups boiling water
1 onion, sliced
Method
Preheat oven to 350°F
Spray a non-stick skillet with cooking spray, and brown the pork chops on each side, seasoning each side with salt and pepper.
Spray a 13 x 9 x 2-inch casserole dish with cooking spray, and transfer the chops from the skilled to the casserole dish.
Add the applesauce, ketchup, flour and boiling water to the skillet in which the chops were browned, taking advantage of any nice brown pieces you may have.
Mix together with wooden spoon or coated whisk (being kind to your non-stick pan)until the mixture is smooth and feels thickened.
Put your slices of onion on top of the pork chops.
Pour your warm mixture over the chops and onions.
Baked in your preheated oven for 45 minutes or until done.
Veggie Suggestions:
I chose zucchini squash as my vegetable, but something green like spinach, broccoli, or green beans would be great, too. Eaten with no butter or sauce, and just a sprinkle of salt and pepper would allow quite a large serving of any of these vegetables.
