New Baked Chicken Rice Recipe Chicken and Rice Casserole with Apple Cider Gravy

I think you'll find that this baked chicken rice recipe will be another go-to recipe when you want an all-in-one, delicious recipe. How many wonderful recipes begin with just a simple, boneless, skinless chicken breast? For good reasons, too...it's all white meat, with no bones to worry about, and since it's free from the fatty skin, it makes for a healthier meal in general.This chicken casserole just gets better and better because the chicken is particularly receptive to a smooth-as-silk apple cider gravy poured over the top. We've added just a touch of Calvados, or apple brandy, which just adds another excellent dimension to the meal.

are always sought after, so we will eventually provide even more of these recipes, prepared in different ways and with other vegetables, ingredients, etc. For right this minute, however, I'm hoping this baked chicken rice recipe or one of our others is just what you're looking for today.
Ingredients
4 small chicken breast halves
2 teaspoons dried rosemary, crumbled
1/4 teaspoon black pepper
Non-stick cooking spray
1-1/2 cups low sodium beef or chicken broth
1/2 cup long-grain rice
1 small to medium yellow onion, cut into 4 thick slices
1 small, ripe tomato, cut into 4 thick slices
1 small sweet, green pepper, cored, seeded and cut into 4 thick slices
Method - Preheat oven to 350°F
- Rub both sides of each piece of chicken with 1/2 teaspoon of the rosemary and with the pepper.
NOTE: This will not result in a great deal of rosemary and pepper on each, but the subtle flavor will come through nonetheless. Rosemary has a strong flavor and we don't want to overpower the other ingredients in this dish. - Lightly spray a 12-inch skillet with cooking spray and place over moderately-high heat for about a minute. Add the chicken pieces and brown them about 2 minutes on each side...enough to seal in the juices while the casserole bakes in the oven.
- Transfer the chicken pieces to about a 1-1/2 quart baking dish sprayed with cooking spray, and add the broth and rice.
- Place an onion slice, a tomato slice and a green pepper ring on each piece of chicken.
- Cover and bake for 1-1/4 hours or until the chicken is cooked through and tender. When finished, take from oven and let the casserole sit for about a minute covered.

1-1/2 tablespoons cornstarch
1/4 teaspoon cinnamon
2 tablespoons water
2 tablespoons Calvados (Apple Brandy)
1-1/2 cups apple cider or apple juice
