Baked Carrot Casserole with Granny Smith Apples

Our Baked Carrot Casserole with Apples is just another recipe that illustrates the versatility of apples. It's ingredients are an unlikely joining of different tastes, that bake together for a lovely accompaniment to any dinner. I happened to make stuffed sweet peppers the other night and decided to forego any potatoes because this casserole completed the meal very nicely. I would include this recipe as one of the healthy casserole recipes because other than the 2 tablespoons of flour, the small amount of brown sugar used for six servings is minimal. With the goodly amount of Granny Smith apples, I would also consider it a healthy apple recipe.
Ingredients
6 Granny Smith Apples (peeled, cored, and thinly sliced)
2 cups cooked carrot slices
1/3 to 1/2 cup brown sugar (I used 1/2 cup, but your taste may differ from mine.)
2 tablespoons all-purpose flour
salt to taste
3/4 cup orange juice
