I seem to have come up with a baked apple pancake that my family really enjoys and I hope you will, too. As a matter of fact, my Mom has declared that she would rather this homemade pancake recipe than any recipe for a “meat and potatoes” meal.
In the bottom of the baking dish, there’s a buttery-sweet syrup in which the slices of apple were cooked. On top of that goes a basic pancake mixture, and it all bakes happily in the oven for just a short time. It's really an easy pancake recipe and one that will help you out in a suppertime "pinch."
When I serve this dish, I turn the slices over so the nice apples and syrup are exposed. If you’re not particularly fond of anything too sweet, you may choose to eat yours “as is.” However, the pancake can be sprinkled with a little powdered sugar or topped with some maple syrup.
Ingredients
4 tablespoons butter
6 tablespoons sugar, divided
1 teaspoon cinnamon
2 apples, peeled, cored and sliced
1 cup pancake mix
1 teaspoon baking powder
2 eggs
1 cup milk
2 teaspoons of canola or vegetable oil
Method
Preheat oven to 400°F and grease a 13x9x2 baking pan.
In a small frypan or sauce pan, melt butter, and add 4 tablespoons of sugar, the cinnamon, and the apples.
Heat together until bubbly and spread in the bottom of pan.
Combine the pancake mix, 2 tablespoons sugar, baking powder, eggs, milk and oil.
Pour this mixture over the apple mixture already in the pan.
Bake for about 14 minutes or until the pancake is cooked through.
Serve plain, sprinkled with powdered sugar, or with maple syrup.
Serving Suggestions:
Perhaps you could serve this with some Canadian Bacon, a healthier form of bacon, or some turkey sausage links or patties.
One fresh fruit like a banana or a combination of fruits as a side dish would add another serving of fruit for the day.
