I served this wonderful Baked Apple Casserole for lunch the other day, and it reminded me of a toss between a light, airy souffle and an apple-cinnamon casserole. It's a bit different from the usual casserole, but it served us well as a delicious luncheon dish.
It might well be considered an egg casserole because eggs play such an integral part in the light and airy nature of our casserole. I chose to top mine with a bit of real maple syrup, but we all know I'm notorious for my "sweet tooth." Do try it without the syrup first; that will give you an opportunity to decide for yourself how you would enjoy the casserole most.
This is not a difficult recipe...in fact I think it might slide into the easy casseroles category. Just an aside on that, however, you will have to refrigerate the batter for an hour, but you can be preheating your oven and cooking up the apples with sugar and cinnamon during that time. I hope knowing this up front will aid you in making up an efficient time schedule for making and serving this Baked Apple Casserole.
Ingredients
4 whole eggs
1/2 cup flour
1 teaspoon baking powder
1/4 teaspoon salt
1/2 cup milk
2 tablespoons rum
2 tablespoons melted butter
3 apples, peeled, cored and sliced
4 tablespoons granulated sugar
1 tablespoon cinnamon
2 egg whites, beaten until firm
2 tablespoons brown sugar
Method
Preheat oven to 375°F and butter a round baking dish. I believe I used a 2-quart dish.
Place whole eggs in a bowl and mix with a whisk.
Sift flour, baking powder and salt together in another bowl.
Add to the beaten eggs, mixing well. Incorporate your milk and rum.
Refrigerate this batter for an hour.
Heat up your butter in a frying pan over medium heat. Add apples, granulated sugar, and cinnamon...cook for about 12 minutes or so.
Remove batter from the refrigerator and fold in the beaten egg whites using a spatula.
Pour this mixture into your prepared baking dish.
Arrange apple slices in center of dish and sprinkle with brown sugar.
Bake casserole for 45 minutes in the preheated oven.
Note: Your egg mixture will puff up around the edges of the apples in the center. It would be best if this were eaten right after removing from the oven, so plan to have everyone in their seats and waiting before you take the casserole out of the oven.
Serving Suggestion: You might like to put together a fruit salad accompaniment like our Favorite Fruit Salad to eat before or with this luncheon or brunch casserole.
