Our Applesauce Coffee Cake Recipe is just the answer to "Someone's dropping by this afternoon and what will I serve?" This apple-cinnamon coffee cake comes together quickly, bakes only about nine generous pieces, and takes only 30-35 minutes baking time.
This recipe for applesauce cake ranks highly among the applesauce recipes, in my opinion. The cake itself is very moist and delicious and sports a lovely combination of ingredients as its crumb topping. Served warm, it's a welcoming treat for any visitors.
I can attest to that because there were only three of us eating this little delight, and it was gone by the following day.
Ingredients
1-3/4 cups all-purpose flour
1/2 cup sugar
1/2 cup butter
1/4 cup chopped nuts (I used walnuts, but pecans would be equally delicious.)
1/2 teaspoon ground cinnamon
1-1/2 teaspoons baking powder
1/2 teaspoon baking soda
2 beaten eggs
1 cup unsweetened applesauce
1 teaspoon vanilla extract
Method
Preheat oven to 375°F and grease or spray a 9x9x2 inch pan.
In a medium-sized bowl, stir together 3/4 cup of the flour, reserving the other cup for later use, and sugar.
Cut butter into the dry mixture, using either a pastry blender or two knives cutting in opposite directions from the middle.
Reserve 1/2 cup of this crumb mixture for the topping, and stir in the chopped nuts and ground cinnamon.
To the rest of the crumb mixture now left, add the other 1 cup of flour, plus the baking powder, baking soda, eggs, applesauce and vanilla extract; and beat until well blended together.
Place the batter into your greased pan, and sprinkle topping over that.
Bake in the preheated oven for 30-35 minutes, testing to make sure a toothpick inserted into the center comes out clean.
Serve warm...plain or with a little scoop of ice cream
