Our Applesauce Baked Beans are perfect to take along with you to your next potluck supper or add to an informal buffet table. With the addition of lean Canadian bacon, you could also refer to this dish as Baked Pork and Beans.
How many times have you seen and tasted other people's homemade baked beans and wished you had the time to make your own. In this recipe, the beans are cooked on the stovetop, which can be done ahead of time. The actual baking time is 2-1/2 hours, but again that doesn't mean you have to "watch over it." You have that time free to accomplish other things while your beans bake happily in the oven.
For some reason, Saturday seems to be a popular night to have baked beans and franks for supper. You could easily cook up your homemade baked beans in the morning or the night before. Saturday, just assemble the other ingredients to add to the beans, and your supper is "in the oven."
Ingredients
4 cups cooked beans - cooked according to the instructions on the bean package. (I used a 16-ounce bag of navy beans and cooked them for about 30 to 45 minutes. You can taste-test them during the cooking process and let them cook until you consider they've reached the desired doneness.)
1 cup bean liquid or water
1/4 cup white vinegar
3/4 cup molasses
1 cup applesauce
1/4 cup brown sugar
6 ounces tomato paste
2 teaspoons dry mustard or yellow mustard
1/2 teaspoon cloves
1 onion, cliced
2 ounces Canadian bacon, cooked and chopped (I found some nice 97% fat free Canadian bacon all cooked.)
Method
Preheat oven to 325°F. Spray about a 9-inch square, deep baking pan or bean pot with cooking spray.
Arrange the sliced onions on the bottom of the pan.
Add beans.
In another bowl, whisk together the remaining ingredients and stir them into the beans.
Cover and bake for 2-1/2 hours. Remove cover and cook uncovered for 30 minutes or until nicely browned on top.
