Apple Whoopie Pies

These Apple Whoopie Pies are so yummy, I can hardly describe them. I hope the photograph helps me out in that regard.
The cookies that sandwich in our thick, creamy, white center are perfectly seasoned, moist, and soft. I made a batch yesterday, and believe it or not, they are all gone.
I guess I could say that these apple whoopie pies are irresistible because it seems as soon as people take a look at them, their hand reaches out to take one. It doesn't really seem to matter whether they've just eaten a five-course dinner prior to that or if they are about to have breakfast. My sister was happy to package one up for the next morning's meal. I can't say that is typical, but she did indeed take one for that purpose.
Go ahead, make up a batch and watch the reactions...they actually "sell" themselves, as if they had to.
Ingredients
1 cup light brown sugar
1/4 cup butter
1/4 cup vegetable shortening
1 egg, beaten
1 cup applesauce
1/2 teaspoon vanilla extract.
1/2 cup old-fashioned oats, whirred in your food processor for just a few seconds. The 1/2 cup measurement is before using the food processor.
1-3/4 cups flour
1 teaspoon cinnamon
1/2 teaspoon cloves
1/8 teaspoon salt
1 teaspoon baking soda
Method - Preheat oven to 350°F; lightly grease cookie sheets. Move the rack in your oven to just above the center; this will keep the cookie bottoms just browned nicely and the tops done.
- Cream together the brown sugar, butter, and vegetable shortening.
- Mix in the beaten egg, applesauce, and vanilla extract.
- In a separate bowl, whisk together the dry ingredients, and add to the wet ingredients, a little at a time.
- My cookies were roughly 3 to 3-1/2 inches round, and to make these, I used a small ice cream scoop with a heaping scoop-full for each cookie.
- I sprinkled the tops with granulated sugar, and then they were ready for the oven.
- My cookies were done in just about 10 minutes, but bake one or two "test" cookies before baking the others, and decide how long to bake yours, based on your oven, the size of the cookies, and how well you like your cookies browned.
- When cookies are taken from the oven, let them stay on your cookie sheet for about 2 minutes before removing to a wire rack for cooling.
- While the cookies cool completely, make up your filling...recipe follows.
Creamy Filling for Whoopie Pies
This thick and creamy filling is perfect for our apple whoopie pies.
Ingredients
1 8-ounce package cream cheese, softened
3/4 cup butter, softened
2-2/3 cups sifted powdered sugar
Method - With an electric mixer, cream butter and cream cheese together.
- Add sifted powdered sugar, a little at a time...beating well after each addition.
- Liberally spread filling between two of the apple cookies.
This recipe makes plenty of filling to be able to sandwich between all the cookies in a batch, so don't worry about running out.
