Apple Walnut Bundt Cake

Deliciously-moist Apple Walnut Bundt Cake, sprinkled with powdered sugar or frosted with cream cheese frosting.


Our Apple Walnut Bundt Cake is a fresh apple cake recipe that you will love to make. It can be a wonderfully-moist apple cake to serve with just a little sifted powdered sugar. On the other hand, if you want to make apple cake that will satisfy your "need for sweets," it can also be frosted with a favorite of mine, cream cheese frosting. It's heavenly either way. During the apple-picking season when so many types of apples are available to us, this apple walnut bundt cake can be made with just about any apple and frozen for a later time. In that case, I would suggest that you not put either the powdered-sugar topping or the frosting on until you choose to defrost the cake.

Powdered sugar does not hold up well because of all the moisture involved in freezing. If you're only freezing the cake for a week or two, then you could frost it before freezing and not anticipate any problems. For longer storage, I would still suggest waiting to frost the cake until it is defrosted.

Ingredients

2 tablespoons sugar

1 teaspoon cinnamon

3 cups flour

1 tablespoon baking powder

1/4 teaspoon salt

2 cups sugar

1 cup vegetable oil

1/4 cup apple juice

2 teaspoons vanilla extract

4 large eggs

1-1/2 cups chopped walnuts

2 cups peeled, diced apples

Method

  • Preheat oven to 350°F

  • Grease and flour a 10-inch Bundt pan, making sure to cover every bit of the pan to prevent anypart of the cake from sticking when it's removed.

  • In a little cup, measure out 2 tablespoons sugarand 1 teaspoon cinnamon, and set aside for now.

  • Sift flour, baking powder, and salt into a bowl and set aside for a few minutes.

  • In a large bowl, combine 2 cups of white sugar, oil, apple juice, vanilla and eggs. Beat the wet ingredients together at high speed until the mixture is smooth. Stir the flour mixture into the wet ingredients.

  • Peel and dice apples and add the sugar/cinnamonmixture to them. Toss together gently to cover all the apple pieces with seasoning mix.

  • Fold in chopped walnuts and apple mixture.

  • Pour batter into your prepared pan. Bake in your preheated oven for 55 to 60 minutes or until cake is firm, well browned, and begins to pull away from pan edges.

  • Let cool in pan for 10 minutes, and turn outonto a wire rack to cool completely.

  • Sprinkle with confections' sugar.

  • This cake serves up to 12 people.

    Cream Cheese Frosting

    Ingredients

    1 8-ounce package cream cheese, softened

    1 teaspoon vanilla extract

    3 cups sifted powdered sugar

    Milk, added and mixed in, one-teaspoon at a time, as needed to reach desired consistency.

    Method

    • Cream together the cream cheese and vanilla.

    • Add the confectioner's sugar a little at a time.

    • If you want a thinner frosting, add milk, a teaspoon at a time, until it's the desired consistency.

    • If you want a thicker frosting, you probably won't need any milk or very little.

    • At any point, if the frosting becomes too thin, just add more confectioner's sugar.

    • This frosting is very forgiving, so you're never wrong. It is my very favorite and it's just delicious.
