Apple Surprise-Inside Cake


Scrumptious Bundt Cake with Apple-Cranberry-Nut filling tucked inside.


This Apple Surprise-Inside Cake is unique, scrumptious, and worthy of being a lovely gift for someone. The cake itself is made extra-tasty with the addition of sour cream.

That's not even to mention the fact that it has two layers of seasoned, shredded apples, dried cranberries, and nuts dotted with butter for even more taste and moistness.

The cake is topped with a luscious Cream Cheese Frosting which happens to be my favorite. However, if you'd rather, you could always substitute that with some Vanilla Buttercream

Although there are a good many ingredients, this cake comes together fairly quickly. If possible, soften the amount of butter and cream cheese ahead of time, so this will not slow up the process. I hope you'll give this one a try because I think you'll like the regal way it looks and tastes. I'm sure anyone receiving this Apple Surprise-Inside Cake will know it says, "You're special!"



Ingredients for Cake

3 cups all-purpose flour

3/4 teaspoon baking soda

1 tablespoon baking powder

1/2 teaspoon salt

3/4 cup butter, softened

1 cup sugar

1/2 cup firmly-packed brown sugar (Please break up or remove any lumps that may be in the sugar so it will blend nicely into the cake batter.)

1 teaspoon vanilla extract

3 large eggs

1-1/2 cups sour cream

Ingredients for Filling

1 cup dried cranberries

2 medium apples, peeled, cored and shredded

1/3 cup sugar

3/4 teaspoon cinnamon

1/2 cup finely chopped, toasted walnuts
NOTE
(It would be best to toast the large pieces of walnuts before chopping into such small pieces. Just spread the nuts out in a single layer on a baking sheet or in a pan and place them in your preheated oven for about 5 minutes, being careful not to forget them because they can burn easily.)

2 tablespoons cold butter

Method for Cake

  • Preheat your oven to 350°F; grease and flour a 10-inch Bundt pan.

  • In a large bowl, whisk together your dry ingredients...the flour through the salt, and set aside for now.

  • In another large mixing bowl, beat the butter and sugars together until light and fluffy. Add the vanilla and eggs...one at a time, beating well after each addition.

  • Alternating with the sour cream, add the dry ingredients to the butter and sugar mixture. Begin with the dry ingredients.

Method for Filling

  • Put your apple chunks into the blender and process until they are of "shredded" consistency and put in a medium bowl.

  • Use your blender again to "pulse" the cranberries a couple of times so they are more in keeping with the size of the apples.This step will make it easier to cut the cake. Add the cranberries to the apples.

  • Now add the sugar, cinnamon, and finely chopped nuts.

Putting the Cake and Filling Together

  • Spoon one-third of the cake batter into the Bundt pan, and spoon half of the cranberry-apple filling over the batter, but not quite to the edge. Dot this mixture with pieces of the cold butter.

  • Spoon the second third of cake batter over the filling. The second half of the filling will be put on top of that batter. Again dot with the remainder of the cold butter.

  • Add your last third of the batter to the pan.

  • Bake in the preheated oven for 55 to 70 minutes or until cake tests done when a long toothpick or skewer is inserted in the center of the cake.

  • Remove from the oven and cool right in the pan for 10 minutes. Then, invert the cake onto a cooling rack where it will be allowed to cool completely before frosting. It will be difficult to wait until our Apple Surprise-Inside Cake is ready for frosting and eating. (or giving)
