Apple Spice Cake Recipe

Our Apple Spice Cake Recipe is wonderful any time of the year. Here we have a beautiful apple bundt cake, either sprinkled with powdered sugar, heated with a caramel sauce or frosted with your favorite frosting. The cake just "steps up to the plate" no matter what you have planned for it.

This recipe for apple cake has "oodles" of apples, making the cake extremely moist. I didn't even keep the leftovers tightly covered with plastic wrap because it would actually become too moist...letting a little air under the wrap in one section keeps the moist cake "just right." You may even decide to cover and store it in the refrigerator.

Ingredients

2 cups all-purpose flour

1 teaspoon ground cinnamon

1 teaspoon ground nutmeg

1 teaspoon ground allspice

1/2 teaspoon salt

1 cup butter, softened

2 cups sugar

4 eggs

1 teaspoon vanilla extract

1 teaspoon baking soda

1 tablespoon warm water

3 apples peeled, cored and chopped

1/2 cup raisins (Optional)

Confectioners' Sugar for dusting if desired


Method

  • Preheat your oven to 350°F; butter a 10-inch tube pan or 13 x 9 pan.
  • If you've chosen to use raisins, cover them with warm water, and let them soak and plump, for 10 minutes. Drain before adding into the recipe.
  • Whisk together the flour, spices, and salt in a large bowl and set aside for now.
  • In another large bowl, cream together the softened butter and sugar, and mix in the eggs and vanilla extract.
  • In a small dish or cup, stir the baking soda into the warm water and mix into the sugar mixture.
  • Mix the dry ingredients into the wet ingredients, and add in your chopped apples and strained raisins, incorporating the fruits well throughout the batter.
  • Place batter into your prepared pan.
  • In the preheated oven, bake in bundt pan for approximately an hour, or in a 13 x 9 pan for about 40 minutes, or until a toothpick comes out clean for both.
  • For the bundt cake, cool in the pan, and once cooled, shake the pan to loosen the cake. Turn out onto a plate and dust with confectioner's sugar.
  • For a 13 x 9 pan, you could just slice and serve from the pan.
