Here is an amazing little apple snack cake…it’s small but packs all the moistness and wonderful taste of the “big guys.” Oven-ready in no time, you probably have the simple ingredients for this apple cake recipe already on hand. This is surely a quick and easy cake recipe.
This apple cake can “jump right in” as a dessert on a weeknight, a lunchbox treat at noon, or a snack after school or before bed. You’ll find a million uses for this multipurpose cake. The fact that it’s small is just another one of its assets. At times, you really don’t need a crowd-sized cake.
When your apple snack cake is baking, the aroma will find you anywhere in the house. You’ll be checking your watch and wondering when the timer is going to signal you back to the kitchen. Believe me, you’re going to want to give this cake a taste-test right out of the oven. Be careful though--it’s hot.
Dress it up with a dollop of whipped cream or down with just a sprinkle of cinnamon-sugar, our apple cake is perfect when you want “a little something sweet.”
Ingredients
1/4 cup butter, softened
1 cup sugar
1 egg
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon cinnamon
1 cup flour
1 teaspoon vanilla extract
2 tablespoons hot water
1/2 cup chopped walnuts or pecans
2 1/2 cups apples, peeled, cored and diced
Method
Preheat Oven to 350°F, and butter or grease a 9-inch round pan.
Cream together butter and sugar, beating well.
Beat in the egg
Sift the salt, baking soda, cinnamon, and flour into the butter/sugar/egg mixture. Mix by hand until just blended...please do not over mix.
Mix in the vanilla extract and hot tap water.
Fold in the chopped nuts and apples.
Put this mixture into your prepared pan and into the preheated oven on the center rack for about 45 minutes.
