Apple Sauce Cupcakes with Cream Cheese Frosting Recipe
These Apple Sauce Cupcakes are slightly different from the usual...the ones with raisins and nuts. It's a simple apple sauce recipe for small, but perfect cupcakes to serve after a holiday or other large meal.
Our recipe adds a new dimension with the inclusion of nutmeg, and that's where the distinction is made. Most apple sauce cupcakes have only cinnamon as their spice. I really like the subtle taste of the nutmeg along with the cinnamon for a change.
Of the applesauce dessert recipes, this one has a high ranking because it's spicy, but not too spicy, it makes a dozen average cupcakes, making it a great dessert to serve following a big meal, or to put in a lunch box for a noontime treat. Ingredients
1/2 cup (1 stick) butter
1 egg
1/4 cup sugar
1-1/2 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
1 teaspoon cinnamon
1-1/2 teaspoons nutmeg
1 cup unsweetened apple sauce
1 teaspoon vanilla extract
Method
Preheat oven to 375°F.
In a large bowl, cream the butter until it's light and fluffy.
Beat the eggs and sugar together and add to the butter; continue beating until well blended.
Whisk the dry ingredients together in another bowl.
Add the dry ingredients to the butter mixture a little at a time, alternating with the apple sauce, being sure one is blended in well before adding the other.
Stir in the vanilla extract.
Using a cupcake tin that will accommodate 12 cupcakes rather than the large muffin pans, line each cupcake well with a paper or foil liner.
Bake in the preheated oven for 15 to 20 minutes or until a toothpick comes out clean.
