This Apple Sauce Cake Recipe, as you can see from the photograph, is as versatile as can be. It can certainly be a wonderful apple sauce coffeecake, made into cupcakes, if you wish, or baked in a decorator pan and frosted for any holiday or occasion.
I know I don't have to mention this, but it has been a great many years since I decorated a cake. Nonetheless, I hope you'll recognize this cake as a shamrock. I thought, "Wouldn't it be nice to have a Shamrock Cake in the freezer?" and off I went.
This is an extremely easy cake to make and the "decorating" is minimal. If you don't have one, you can pick up a Wilton shamrock cake pan at your nearby craft store or wherever cake decorating supplies are sold.
The recipe for the frosting is on the label, as well as cooking temperature and time to bake. You'll only need a medium and large, or just large, star decorating tip. You may have a decorating bag at home or only one is needed for the green frosting. You may also have green food coloring left over from Christmas baking...you don't need much.
Keep the frosting white for the whole cake, and pipe large stars in green around the bottom and around the shamrock form on top of the cake. That's really it! If you choose, you can pick up whatever other decorations strike your fancy at the craft store, but you could just sprinkle a little green sugar on the top for a more finished look.

The recipe that follows is for the apple sauce cake recipe baked as a coffeecake in a bundt cake pan. I followed the directions that came with the cake pan for the "shamrock version."
Ingredients
1 Yellow Cake Mix
3 large eggs
1 2/3 cups applesauce (I used unsweetened for this cake.)
1/4 cup sugar with 2 teaspoons cinnamon combined with the sugar.
Method
Preheat oven to 350°F, and grease your bundt pan.
Sprinkle a tablespoon of the sugar-cinnamon mixture into the pan.
Beat together the cake mix, eggs, and applesauce. Reserve 1-1/2 cups of the batter for later use.
Pour the rest of the batter in the mixing bowl into your prepared pan, and sprinkle with the rest of the cinnamon-sugar mixture.
Add the 1-1/2 cups of reserved batter to the bundt pan.
Bake for 45 minutes in the preheated oven and do the toothpick test. Let the cake continue to bake until the toothpick comes out clean. It could be as long as 55 minutes or so, depending on your oven.
