Our Apple-Raisin Loaves will be "just the ticket" for anyone who's lamenting about having to donate to a bake sale. No problem!
This wonderful apple-nut bread recipe will put you right "at the top of the class" because it yields not only one loaf, but two. It's definitely homemade, but you need only get out the ingredients once, you need only mix the ingredients once and you need only use your oven once. Of the apple bread recipes, this one is quick and is a lovely bread recipe without yeast.
How great is that? Two donations to the bake sale for half the work. I don't know if a recipe can do much more than that except what these loaves do...taste like you did not half but all the work.
Ingredients
3 eggs
1-1/2 cups vegetable oil
2 cups chopped apples
1-1/2 cups sugar
1 teaspoon vanilla extract
3-1/3 cups flour
2 teaspoons baking soda
1 teaspoon baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 teaspoon cloves
2/3 cup raisins
2/3 cup chopped nuts
Method
Heat your oven to 350°F, and grease and flour two 9x5x3-inch loaf pans.
Beat the eggs, oil, apples, sugar and vanilla on low speed for 1 minute, scraping the bowl if needed.
Mix together the flour, baking soda, baking powder, salt, cinnamon and cloves.
Add the dry mixture to the wet ingredients, and beat on low just until moistened (about 15 seconds). Do not over beat, please.
Fold in the nuts and raisins carefully, and spread mixture into the prepared pans.
Bake in preheated oven for 55 to 60 minutes, or until a wooden toothpick inserted in the center comes out clean.
Cool 10 minutes and remove from pans.
Cool completely on racks before slicing. Refrigerate any leftover bread.
Now, just wait until the apple-raisin loaves cool, wrap them nicely, and refrigerate them until they're "off to the bake sale."
