This Apple Pie Cake is just the way to pamper your sweet tooth. It's a sweet apple dessert that has quite a few wonderful elements to it that make a double, if not triple, taste treat...you have cake on the bottom, pie filling in the middle, and a sour-cream top that is reminiscent of a cheesecake. What a sweet explosion of flavors in your mouth from the first bite.
I found this particular recipe at 30 Day Gourmet, and with it came instructions for making from 1-6 of these desserts. They have a wealth of information about freezing this and a host of other recipes from that site. I particularly enjoy cooking and baking for the freezer because it is so convenient having a "stash" in the freezer...cuts down on time spent if you have extra guests or when you have drop-ins. Sometimes, it's just nice to have a couple of apple desserts "ready to go" for your evening meal.
Ingredients
1 box yellow cake mix
1/2 cup butter or margarine, softened
1/2 cup shredded coconut
3 cups apples, chopped
1/2 cup sugar
1 teaspoon cinnamon
1 egg
1 cup sour cream
Method
Preheat oven to 350 degrees.
Mix the cake mix, butter or margarine, and shredded coconut in a mixing bowl.
Press into a 9x13 pan and bake for 10 minutes.
Remove from oven.
In a separate mixing bowl, mix apples, sugar and cinnamon.
Spread apple mixture on top of partially baked crust.
In a mixing bowl mix the egg and sour cream. Spread over the apple mixture.
Bake the cake for 30 minutes.
Freezing Directions: Cool. The cake can be frozen whole or cut into bars. Place in a freezer container or gallon freezer bag. Seal, label and freeze.
Unfortunately, this apple pie cake did not last long enough at our house to be frozen, but I would definitely give it a try. Maybe I should make 2 the next time.
