Apple Pannekoeken

This is a basic recipe for Apple Pannekoeken, which is an oven-baked, puff pancake with sauteed apples in the center. I chose to also add a little whipped cream around the outside of the filling. Mmmmmmm
I just bought a Pannekoeken Pan from The Prepared Pantry, so for supper the other night, I put together the pannekoeken and baked it in the oven. Meanwhile, I made the seasoned, sauteed apples for the filling.
It was actually exciting to see that Pannekoeken just rising up and above the pan...we couldn't wait to taste it. The puff pancake just slid right out of the pan and onto a serving dish...not one bit of sticking thankfully. All that was left was to spoon the delicious apples right into the middle.
You actually could eat the Pannekoeken plain with your favorite syrup, too. It has a nice buttery taste, almost reminiscent of a popover. Any way you serve it, I'm sure you'll just marvel at the wonderful taste. Why not begin by trying this Apple Pannekoeken...I can definitely say that ours was scrumptious.

Ingredients for the Pannekoeken
1/4 cup butter
3 large eggs
1/8 teaspoon salt
3/4 cup milk
3/4 cup all-purpose flour
Method for the Pannekoeken - Place the butter in the Pannekoeken pan or an ovenproof skillet with rounded sides.
- Preheat your oven to 425°F. Put the rack in the center, not the top, shelf. When you turn the oven on, place the pan with the butter in the oven. When the oven reaches 250°F, the butter should be melted. Remove the pan from the oven.
- Whisk the eggs and the salt in a medium bowl, add the milk, and whisk in the flour until nearly smooth. That's it...your batter is ready.
- Pour the batter into the pan.
- Bake for 15 to 18 minutes or until the top starts to turn golden brown.
Ingredients for the Apple Topping
2 or 3 medium cooking apples
1 teaspoon cinnamon
1/4 teaspoon nutmeg
1/8 teaspoon ground cloves
2/3 cup brown sugar
1/3 cup walnut pieces (optional)
1/3 cup butter
1 tablespoon flour
Method for the Apple Topping - Peel, core, and thinly slice the apples. Mix the cinnamon, nutmeg, cloves, and brown sugar together in a medium bowl. Add the apples and walnuts, and set aside.
- In a large saucepan, melt the butter over low heat.
- Add the apple mixture and cook over medium heat, stirring often, until the apples are nearly tender and the syrup is bubbly.
