Apple Oatmeal Muffins
with a Lemony Twist

These apple oatmeal muffins have a lemony twist


Our apple oatmeal muffins are made absolutely "to-die-for" by the addition of lemon juice and the wonderful lemon glaze.

Are you thinking that you're not sure about a lemon glazed apple muffin? I don't blame you because I was, too. Not to worry...I was eating them two at a time, and I've never eaten more than one muffin at any one time in my life.

These easy apple muffins are only made better with the lemony flavor, believe me. If you bake these apple muffins in a mini-muffin tin,they would be a most welcome addition to any brunch, or maybe a nice lunch-box treat.

I hope you'll try these apple oatmeal muffins and enjoy their lemony twist as much as I do. They did quite a "disappearing act" at our house.

Ingredients

1-1/4 cups all-purpose flour

1/2 cup packed light brown sugar

1-1/2 teaspoons baking powder

1 teaspoon baking soda

1 teaspoon ground cinnamon

1 teaspoon salt

1/4 teaspoon ground nutmeg

1 large egg

1/2 cup milk

1/4 cup vegetable oil

2 tablespoons of fresh-squeezed lemon juice or lemon juice from concentrate

3/4 cups quick-cooking or old fashioned oats

1 cup finely chopped Granny Smith apples

1/2 cup chopped walnuts or pecans.

Lemon Glaze Recipe below.

Method

  • Preheat oven to 400°F

  • In a small bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, salt and nutmeg.

  • In a medium-sized bowl, beat egg and stir in milk, oil, and lemon juice.

  • Add oats and mix well...let sit while you're chopping apples.

  • Add flour mixture, chopped apples, and nuts. Stir only until moistened (batter will be thick).

  • Spoon into paper or foil liners for 2-1/2-inch muffin cups.

  • Bake in your preheated oven for 20 minutes or until golden. I started checking around 15-20 minutes with a toothpick inserted into the center. When it comes out clean, they're done.

    When you take the muffins out of the muffin pan, place them on a wire rack with a large piece of wax paper underneath. That way, you can glaze them and the paper will catch any drippings.

    Makes one dozen 2-1/2-inch muffins

    LEMON GLAZE In a small bowl, combine 1/2 cup confectioners' sugar, 1 tablespoon lemon juice (fresh or from concentrate), and 1 tablespoon melted butter. Makes about 1/4 cup.
