Ingredients
2 eggs, beaten in a large bowl
1 cup vegetable or canola oil
1 teaspoon of vanilla extract
1 teaspoon salt
2 cups all-purpose flour
1 teaspoon baking soda
2 cups granulated sugar
1 teaspoon ground cinnamon
1 cup of chopped pecans
1 can apple pie filling
3 tablespoons confectioner's sugar
Method
Preheat oven to 350°F, and generously grease a 13x9x2 pan.
Take the large bowl in which you have beaten the two eggs, and add the next 7 ingredients. With your electric hand mixture, beat the batter ingredients together.
Incorporate the chopped pecans and the apple pie filling with a wooden spoon,and transfer batter to your prepared pan, spreading it evenly over the bottom of the pan.
Bake in preheated oven for 55 minutes, checking to make sure a toothpick inserted in the center of the cake comes out clean.
Cool cake on a wire rack, and sift the 3 tablespoons of confectioner's sugar on top of the cake.

5 medium apples peeled, cored and sliced (I used Granny Smith, but you may have another variety in your house.)
4 teaspoons ground cinnamon, divided
1/2 teaspoon ground nutmeg
1/2 cup sugar
1-1/4 cup apple cider or juice (I always keep apple juice in the fridge for my grandson, Robert, so that's what I used. I'm sure if you have cider in your home, using that would bring an even more pronounced apple flavor to the dish, and that's always a good thing.)
18-ounce box of yellow cake mix
3/4 cup butter, melted (That's a stick and a half.)
3/4 to 1 cup of chopped nuts...your choice
Method
Lightly spray or grease a 13 x 9 x 2 pan.
Preheat oven to 375°F I used a glass dish and if you do, too, please reduce that to 350°F. This is pretty much the rule of thumb when using a glass baking dish...reduce cooking temperature 25°F.
In a bowl, mix sliced apples with 2 teaspoons of the cinnamon plus the nutmeg and sugar.
Spread this mixture evenly over the bottom of your baking pan.
Cover the apples with your apple juice or cider.
Sprinkle the dry cake mix evenly over that mixture.
Season with the remaining two teaspoons of ground cinnamon
Pour the melted butter evenly over the top, and sprinkle with chopped nuts.
