Apple Cinnamon Pancake Recipe

Light, fluffy apple-cinnamon pancakes for breakfast or any time.



Our Apple Cinnamon Pancake Recipe is what many people might refer to as a "pancake recipe from scratch." That term, "from scratch," seems to intimidate many people because it dredges up thoughts of many ingredients and endless hours in the kitchen. I'm happy to say that this fear should not apply to our Apple Cinnamon Pancakes. Use your food processor to shred the apples and the rest is a "piece of cake."

This pancake batter recipe is quite thick, but it turns out the lightest and fluffiest pancake you can imagine.

Our basic pancake recipe can be used to make a large batchof this breakfast treat. If you're only serving one or two, you can tuck some away in the freezer for a delightful, change-of-pace weekday breakfast. Can't you just taste those apple-cinnamon pancakes on a Tuesday or Thursday? Mmmmm...something to look forward to when the week seems long.

Ingredients

1/2 cup butter, melted

2 eggs

2 cups milk

2 cups shredded tart apple, like Granny Smith

2-1/2 cups flour

2-1/2 teaspoons baking powder

1/2 teaspoon ground cinnamon

2 tablespoons granulated sugar



Method

  • In a large bowl, mix butter, egg, milk and apple together and set aside.

  • Don't forget to put your food processor to use grating those apples.

  • In another bowl, whisk together the flour, baking powder, cinnamon and sugar.

  • Stir the dry ingredients into the wet ingredients, just until combined.

  • Heat a griddle or frying pan to medium-high. Pour the batter out by 1/4 cups full.

  • When bubbles begin to appear on the top, sneak a peak at the bottom. If browned,turn over to brown the other side.
